Well, these drew a lot of attention on my FB page last night, so I thought I had better share the recipe with all. The inspiration came firstly from the 12 day detox that I am testing at the moment, a great program that will be available online in a month or so, and also from the cafe I visited with my friend at lunch today. I have had a bag of beautiful black wild rice sitting in my pantry for the last 8 months or so and this dish suddenly came to me. They were delicious! The measurements won’t be exact as I threw everything together, but it won’t really matter….. this is a guide and you can change ratios etc.
1/3 – 1/2 cup of wild rice
1/2 cup persian red lentils
1 whole sweet potato – peeled and roughly chopped
1 Beaten egg (although I couldn’t add this on the detox or if you’re vegan just omit)
Fresh coriander – handful – chopped
1/2 tsp coriander powder
1 tsp cumin powder
1 tsp mild curry powder
optional: you could add some finely chopped onion, grated ginger or chilli
Boil wild rice in a large pot for about 10-15 mins, then add the lentils and cook for another 10-15 mins, then add sweet potato. Once all cooked, drain and then mash (the wild rice and most of the lentils will stay firm). Add all other ingredients and form patties. Coat with desiccated coconut and place in the oven for about 15-20 min to firm up. So easy!
You can serve these with so many things…. a crisp salad, avocado, a carrot & cumin dip (delish), a greek yoghurt dressing, some chilli & coriander….just some ideas.
