Quinoa, Chia & Vegetable Loaf
1/3 cup quinoa
1/4 cup chia
Soak for a few hours in water that covers + 1cm approx (the chia & quinoa will absorb this)
Steam or boil an assortment of cooked root veggies. 2 cups approx… Sweet potato, potato, carrot and roughly mash
1 Spring onion – chopped
1 Red capsicum – finely chopped
1 rasher of bacon – finely sliced (optional for non vegetarians)
1 egg ( 1 used 1 egg but 2 would hold it together even better – especially if going into school lunches the next day)
1 tsp Greek oregano – fresh or dried (i like the greek one still on the stem)
1 tbls good quality Seeded mustard
1 tsp Paprika – sweet
Salt/ pepper to taste
Place all ingredients in a large bowl and mix thoroughly.
Grease a loaf tin and bake in a moderate oven (180-220) until the loaf is firm to touch… about 40 mins.
PLease note these quantities are approx and a guide… feel free to use your own intuition and have a play with different tastes etc.
This was delicious served with avocado, goats cheese & pesto, or you could add some caramelised onion etc.
The kids actually really enjoyed this one too…. much more so than the buckwheat one I did.
